In times of weakness on a ketogenic diet, I experiment in my kitchen with desserts. Thanks to this, I created a cake that is healthy and delicious. It does not contain flour, sugar, or gluten. It is suitable for people on keto, low-carbohydrate diets, and people on other diets. If you want a healthy dessert – you’ve come to the right place! This cake consists of several layers and can be freely modified.

Keto

This recipe is for a 30×26 cm baking mould. If you have smaller, it is better to reduce the number of ingredients proportionally – the cake is high, to the edge of the mould. The mould should be lined with baking paper.

Keto brownie:

The first layer, our „base”, is the brownie layer. I used dark chocolate, without a gram of erythritol, but if you prefer sweeter pastries, it is worth adding one or two tablespoons to the dough.

– 200g of dark chocolate (the higher the cocoa content, the better)

– 200g of butter

– 8 eggs

– optional: a pinch of baking powder

Melt the butter in a pan with chocolate. Cool. Blend with egg yolks. Beat the whites separately to a stiff foam and mix gently with the cooled dough. Put on a baking mould.

Keto cheese layer:

– 500g of ground white cheese, preferably fat, lactose-free.

– 2 eggs

– 60g of coconut flakes

– optional: 2 tablespoons of lemon juice, 2 tablespoons of erythritol

Blend the cheese with the rest of the ingredients until smooth. The finer the ground cheese is, the better. We put it on the brownie layer.

Keto apple layer:

– 8 apples

– cinnamon

– a packet of gelatine

Keto

I leave the type of apples to an individual decision, everyone prefers a different kind of apple pie, e.g. more or less sour. I gave 8 large apples because I wanted the layer to be quite thick, you can naturally reduce their number. Peel the apples and grate them on a grater. Stew in a pan until tender. Add cinnamon to taste, gelatin. If you like a looser texture, use less gelatin. The given amount gives a compact consistency, perfect for slicing, not a soft mousse. Put the roasted apples on the cheese layer.

Meringue:

– 5 whites

– 70g of coconut flakes

– optional: a pinch of baking powder, erythritol (3 teaspoons)

Beat the whites into a stiff dough with or without erythritol and powder, if you don’t want to add them (it will also come out delicious). Finally, mix with coconut flakes. Put the foam on the apple layer. You can also easily omit the meringue layer if you want to simplify our cake as much as possible, or you have no idea what to do with the yolks.

Crumble:

– 50g of butter

– 100g of coconut flakes

– optional: erythritol

Knead the ingredients. Cool for about 30 minutes. Then we nibble it on the apple layer to make a crumble.

Preheat the oven to 180 degrees Celsius and bake it for 15 minutes. Then reduce the temperature to 160 degrees Celsius and bake for another 30 minutes. Turn off the oven and leave it in a hot oven to cool. After baking, remember to give the cake a few hours to cool down and for the gelatin to bind. It tastes delicious for a few days, you don’t feel the difference in taste. Brownie is perfectly soft, baked, but not dry.
